I must say, your AA rolls this game were exceptional.
Not as exceptional as I'd like. I only killed one aircraft, and you got many air attacks in on my Yamatos. Overall, not great dice on my part.
Yes, but my Avenger was aborted just about every single turn.

Both of our torpedo dice were laughably abysmal.

I think I made a mistake in using my Avengers to go after the subs on the first turn of the game; I think I should have concentrated on the Yamatos from the start as that was the entirety of your surface fleet.

I will gladly play again if you are willing. At least I didn't lose the New Jersey...

Any suggestions for fleet building and/or strategy and tactics?

I'd be open to another match, but maybe not on an oversized map, eh?
As for strategy... in this particular case, I think you were too timid with NJ. I would have paired her with Atlanta and charged in much sooner (not immediately). Yeah, she might have gotten blown up, but as she closes her odds of a vital go way up. You seemed very focused on getting in shots without taking shots in return, which let me claim three objectives. Losing NJ but sinking a Yamato in return might have won you the game... a single Yamato would have had a much harder time weathering all those air attacks. Likewise, with air, I would have focused on one Yamato until it was dead.

Just my 2 cents.
I would tend to agree with your analysis. I had very similar thoughts.

Do you dislike oversized maps because your surface fleet is frequently exposed to air attack?

I've actually been working on a set of house rules to make games on larger maps more interesting and balanced (with more complex carrier rules and different torpedo rules), and am also trying to work out a system for hidden movement (semi-hidden really, as it would involve fleets being divided into several numbered "task forces," the composition of which (which you would pm to a moderator) would only be revealed once sighted).

Large map games take longer, and swing the balance in favor of air attack. I can take carriers and planes too, but the balance definitely favors air in larger maps. This game took what, 9 turns? Most games are over in 4-5.
Playing with the "long distance" rules would go a long way to balancing, as planes would actually have to roll to place. But that involves the long distance map IMO... or playing at Night, using the Night Rules.

Forcing carrier aircraft to rearm seems to help quite a bit.
