Question - if one of my destroyers smokes, will I get concealment this turn for your surface attacks?
Yes, if you use smoke, Concealment is immediately applied. It would effect my fire at you this turn. Also, if you smoke in a sector between a target and one of your ships that hasn't fired yet, it can block your fire. You always want to make smoke the last thing you do in your surface fire step.

I believe Ambra is reduced to 1 torpedo die = 3 attack normally, +1 destroyer killer, but -3 for three counts of ASW threat. So, one torpedo against Arunta:

I'll do my surface fire here shortly, but something to note: Submarines fire torpedoes in a separate step after all surface ships fire. Your submarine torpedo shot wouldn't happen until after all surface ship activity, including ASW, has occurred.
