I thought I read some where that the following sequence is a legal move, but for the life of me I can't find it again. Can someone verify this for me?
A towed artillery piece that starts the movement phase hooked up to a vehicle can be moved AND unlimbered in the movement phase. It is then able to attack in the following assault phase.

Thats how we play it Mike. Once the gun is on the ground it moves in combat phase only, just not the same turn as you dismount it.

OK, so separate scenario, if in turn one assault round, arty fires, truck pulls into hex, and turn ends. Turn 2 movement arty can hook up and move with truck, right?

Yes, providing it isn't large. If the gun is large then the truck must pull up in the movement and the gun then loads as not to trigger over stacking.
